Ingredients: 1 tablespoon olive oil; 40g butter; 1 onion, finely chopped; 2 cloves garlic, crushed; 350g Aborio or Canaroli rice; 1 cup white wine; 4 cups chicken stock; Salt and freshly ground black pepper; ½ cup grated parmesan cheese

This is originally a recipe that came with the Breville risotto rice cooker. Super simple and delicious. I have had no trouble making it in an Instant Pot as I no longer have the Breville.
