"Oh Boy" Waffles
This is the recipe I grew up with. My grandfather made it, my mom made it. I believe it originates in one of the classic recipe books like Betty Crocker or Red Book.
Preheat waffle iron.
1¼ cups flour
2 tsp. baking powder
¼ tsp. salt
1 tbsp sugar
1 egg
1+ cup milk
¼ cup oil
Combine dry ingredients in one bowl and stir. Combine eggs, milk and oil in a separate bowl and blend thoroughly with a whisk.
Next add the liquid to the dry ingredients and beat just until moist. Batter should still be lumpy.
Cook according to iron directions. Typically 6 or 7 minutes.
Makes enough waffles for 2-3
