Altitude version that works every time. Getting HBE right at altitude is annoying because the boiling point of water is significantly lower. Using a pressure cooker makes it extremely straightforward. This should work fine at sea level too.

in Instant Pot/Electric pressure cooker

Place a steamer basket or other grid in the bottom of your Instant Pot. Add 1/2 to 1 inch of water to the pressure cooker. The water level should be just below the steamer basket.

Use cold eggs, straight from the fridge. You can cook any number of eggs at one time with no adjustments.

Close the lid on the pressure cooker and make sure the steam valve is set to the “sealed” position. Set the pressure to high and set the timer for 5 minutes.

Let it sit for 5 more minutes after the pressure phase has completed, then manually release pressure.
