Per person: 2 slices thick sandwich bread (i.e ‘Texas Toast’) or 3-4 slices baguette 1 egg 1 tbsp sugar ¼ cup milk ½ tsp vanilla extract ¼ tsp cinnamon 

Butter or margarine Mix sugar, salt, cinnamon and vanilla together. Beat eggs and sugar together until well blended.  Add milk and continue to beat 2 minutes more. 

Place bread in a shallow baking dish or pan side by side. Do not overlap slices.

Dip each slice into the mixture to ensure it is coated everywhere. Pour remaining mixture over top. Cover dish and refrigerate overnight. By morning, mixture will be completely absorbed into bread. -or- Dip each slice into mixture before placing in pan, then pour remaining mixture evenly over top and allow to rest for 10 minutes.  

Fry low and slow in margarine or butter in skillet until both sides are nicely browned. If using large bread slice in half diagonally before plating. Dust with powdered sugar if desired.
