Mildly fiddly because of the room temp ingredients, but worth the effort. Just put very hot water in a bowl to warm it up then dump and put the milk in to warm to room temp, put the egg in a bowl or mug with hot tap water.

1 cup all-purpose flour

2 Tbsp sugar

1.5 tsp baking powder

1/8 tsp table salt

1 large egg, room temperature

2 Tbsp melted butter, plus extra for greasing the skillet

5.5oz whole milk, room temperature

A drop of vanilla
Combine dry ingredients and stir. Combine wet ingredients and whisk. Stir together til just lumpy.
