Cowboy Coffee Cake
A true classic in my household. Grandpap made it whenever we would visit.
Oven: 375 F
290g (2-1/3 cup) flour
470g (2 cups) brown sugar
1/2 tsp salt
115g (1/2 cup) margarine (soft) or shortening
2 tsp baking powder
1/2 tsp soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup milk
2 beaten eggs
Makes two 8” round pans or one 9x13”, grease and flour pans.
Combine all the dry ingredients with the margarine. Blend it with a fork until it is crumbly ‘like cornmeal’. Reserve about half a cup of this mixture to use as the topping, I usually reserve a bit more.
Beat the milk and eggs together with a whisk, then stir into the dry ingredients until it is a lumpy batter. Carefully sprinkle the reserved crumbs on top.
Bake 30-35 minutes, toothpick in center should come out clean.
